Product Info
We sell two types of honey:
- Pure Raw Blossom Honey: This is honey in its most traditional form. It is "monofloral," meaning the bees forage primarily on one type of nectar (like Sourwood, Tupelo, or Clover). The flavor, color, and texture are determined entirely by the flower and the season.
- Infused Honey: Our infusions are a culinary marriage of raw honey and organic botanicals. We take our pure base honey and slowly marry it with natural ingredients—like smoked chiles, Madagascar vanilla beans, or fragrant herbs—to create a unique, layered flavor experience that is perfect for pairing with cheeses, teas, or savory dishes.
The short answer is no, pure honey does not "go bad" in the traditional sense. It is one of the only foods on Earth that has an almost indefinite shelf life. In fact, archaeologists have discovered pots of honey in ancient Egyptian tombs that are over 3,000 years old and—incredibly—still edible! However, while it won't spoil or make you sick, its appearance and texture will change over time.
Why Honey Lasts Forever
Honey is a "perfect storm" of chemistry that prevents bacteria from growing:
- Low Moisture: Honey is roughly 17-18% water. Bacteria and microorganisms need more moisture than that to survive; they essentially dehydrate if they try to grow in honey.
- Acidity: Honey has a low pH (between 3 and 4.5), which is acidic enough to kill off most bacteria.
- Hydrogen Peroxide: When bees digest nectar, an enzyme called glucose oxidase is added. This creates hydrogen peroxide as a byproduct, which acts as a natural preservative and antibacterial agent.
Changes You Might See (That Aren't "Spoiling")
1. Crystallization (Turning Solid)
This is the most common reason people think honey has gone bad. Over time, the natural sugars (glucose and fructose) will bind together and turn into white, crunchy crystals.
- Is it safe? Yes! It’s a sign of pure, raw honey.
- The Fix: Place your jar in a bowl of warm (not boiling) water. The crystals will melt, and the honey will become liquid again. Do not microwave it, as high heat kills the beneficial enzymes you want in raw honey.
2. Darkening & Flavor Changes
As honey ages, it may become darker in color and the aroma might change slightly. This is a natural chemical reaction called the Maillard reaction. It doesn't mean it’s bad; it just means it's maturing.
Storage Tip for The Bee Charmer Customers:
To keep your Bee Charmer honey in peak condition, store it in a cool, dry place away from direct sunlight (like a pantry). Do not refrigerate it, as the cold temperature actually speeds up the crystallization process!
Absolutely. We have officially transitioned away from plastic and non-recyclable materials to ensure our footprint is as pure as our honey.
At The Bee Charmer, we believe that the world’s finest honey deserves a vessel that respects the Earth. Here is how we are staying sustainable:
· 100% Glass Packaging: All of our honey—including our new, signature 24oz jars—is now bottled exclusively in glass. Glass is infinitely recyclable, non-leaching, and preserves the purity and flavor of our honey better than any other material.
· Plastic-Free Initiative: With the singular exception for our customer-requested “Hot” Honey” squeeze bottles, we have removed plastic and non-recyclable containers from our honey lineup. When you finish a jar of our honey, the glass can be recycled curbside or, better yet, washed and repurposed in your own home.
· Shipping Materials: We extend our commitment to sustainability to our shipping process, using recyclable corrugated cardboard and protective materials to ensure your glass jars arrive safely without relying on unnecessary plastics.
By choosing The Bee Charmer, you are supporting a plastic-free future for our planet and our pollinators.
Glad you asked because we have a whole section of our website dedicated to making you a great chef using honey to accent and enhance all your favorite foods. See "Pairings" above in our dropdown menus and also the "Pairs Well With" section of each honey varietal product page.
